We love flour because it's rawer and gives fabulous pizza results.

Why? Because you can put more water in it to increase the percentage of hydration, and thus achieve this result. But be careful, the dough will stick more: it is therefore more difficult to manage. For the experienced pizza maker only!

Fermentation time? 24 to 36 hours

Its 2.2 lbs (1 kg) size allows you to make about 6 12” pizzas.

Can you really concoct a good pizza dough with 0 flour? YES! That’s right, it’s often recommended to use 00, which is the highest quality flour that’s soft, white, finely ground and made from the heart of the grain.

The Tipo 0, on the other hand, is less refined and made from around 70% grain. It therefore contains more bran (wheat husks) than its 00 cousin. It is darker and has a coarser feel.

That said, both flours can be used for pizza, because they are in the same range (hihi) of strength and gluten content. Moreover, the prestigious AVPN (Approvato Vera Pizza Napoletana) confirms that an authentic Neapolitan pizza must be prepared with Tipo 00 or Tipo 0. Afterwards, it is up to you to test and determine which one you prefer. prefer!
