The disadvantage of an unperforated peel is that the pizza dough tends to stick more than with a perforated or wooden peel. That said, it is perfect for those who want to cook a large pizza without paying the price of the perforated version. In any case, be sure to sprinkle a little flour on it to make it more slippery.

The Gi. Metal is made of anodized aluminum. What does it eat in winter? First, the material makes the peel lighter than conventional models, yet extremely sturdy. Second, anodized aluminum is abrasion resistant (goodbye rust) and high temperature resistant (a must for your 900°F pizza oven!).
